Olive oil

About 1’800 olive trees were newly planted several years ago and all olives are processed to olive oil. The trees are maintained in accordance with the European guidelines for organic farming.

We mainly use local French olives but also add Spanish and Italian ones to be able to give the oil an individual and special flavor. Our sweet and fruity olive oil is a very tasty companion to most salads, fish or steamed vegetables.

Olive varieties grown on Le Mas Py

Olivière is the typical olive tree from the Pyrenées-Orientales region of France. This olive tree is known for its resistance to cold. The low percentage of oil content in this fruit is compensated by a large number of olives on each tree. An excellent oil can be obtained from this olive. To gain good harvests the Olivière requires other kinds of olives for pollination (e.g.: Picholine, Arbequine).

Picholine is a French olive cultivated in the region of Gard, Languedoc. Picholine produces a fruity, slightly bitter oil.

Arbequina is grown mainly in Cataluña. The olives are small and do not easily fall from the tree, therefore they have to be harvested by hand.

Picual is the most important type of olive. This type of olive is being used for approximately 50% of the Spanish and 20% of the world-wide production . The home and the main growing area is the province of Jaén in Andalusia (91% of the crop). The olive provides a high-quality oil with a great stability and high acidity. Picual has a strong, fruity flavor and is particularly rich in vitamin E. The strong flavor distinguishes it from other varieties.

Manzanilla is Spanish and means in English “chamomile”. Manzanilla is both a famous sherry from Andalucia and the name of an olive variety, which comes from Dos Hermanas Sevilla. Manzanilla is the most widely used olive-to-eat in Spain.

Our olive oil is as all our products certified organic and we are entitled to label it “Vierge Extra”  French for “Extra Virgin”, which is the highest quality class for olive oils.
